Well, it's Sunday, football is on, it's cool and very rainy outside. The leaves are mid change into beautiful colors. What better time to make some Portuguese Kale Soup! You will need:
- 1 medium onion chopped
- 4 table spoons olive oil
- 4 sticks chorico or linguica cut into large pieces
- 5 potatoes peeled and cut into large pieces
- 2 lbs stew meat
- 2 cubes beef bouillon (or beef broth)
- 2 bags kale greens or 4 bunches of kale. Remove the hard stock and chop.
- 2 cans kidney beans (if you like beans)
- In a large soup pan, add olive oil and onion. Heat until onions are soft.
- Add the rest of the ingredients except the kale. Fill the pot with water to cover the ingredients. Bring to a boil and then reduce to simmer until the potatoes are soft. I don't like beans so I don't add them.
- Add salt and pepper to taste.
- Add kale and bring to a boil. The kale will only take 5-10 minutes to cook. You can add more water to cover the kale, especially if you like broth.
Once the kale is cooked, the soup is ready to be enjoyed. I find that it taste's better the 2nd day! Get your bread, butter it up and dig in!
