Making Meatballs

So I figured I needed to try my hand at meatballs. I haven't had them in a while and I really don't like store bought frozen ones. Here are the ingredients:


  1. 3 lbs hamburger
  2. 4 eggs
  3. 1 cup italian bread crumbs (or whatever your choice of flavor is)
  4. 1/2 cup grated romano cheese
  5. 1-1/2 medium onion diced
  6. salt and pepper to taste
Put all the ingredients into a large bowl. Mix everything together by hand really good. Roll the meatballs into whatever size you want. Put them on a baking sheet. Boil water and place into the water making sure they boil at least 10 minutes or until they reach temperature. Add to your sauce and enjoy. Salt and pepper to taste.






Kale Soup Recipe

Well, it's Sunday, football is on, it's cool and very rainy outside. The leaves are mid change into beautiful colors. What better time to make some Portuguese Kale Soup! You will need:


  • 1 medium onion chopped   
  • 4 table spoons olive oil       
  • 4 sticks chorico or linguica cut into large pieces
  • 5 potatoes peeled and cut into large pieces
  • 2 lbs stew meat                        
  • 2 cubes beef bouillon (or beef broth)
  • 2 bags kale greens or 4 bunches of kale. Remove the hard stock and chop.
  • 2 cans kidney beans (if you like beans)
  1. In a large soup pan, add olive oil and onion. Heat until onions are soft.
  2. Add the rest of the ingredients except the kale. Fill the pot with water to cover the ingredients. Bring to a boil and then reduce to simmer until the potatoes are soft. I don't like beans so I don't add them.
  3. Add salt and pepper to taste.
  4. Add kale and bring to a boil. The kale will only take 5-10 minutes to cook. You can add more water to cover the kale, especially if you like broth.
Once the kale is cooked, the soup is ready to be enjoyed. I find that it taste's better the 2nd day! Get your bread, butter it up and dig in!
